Spelt Flour Pizza Dough
Turn it out onto the surface and knead it a few times.
Spelt flour pizza dough. Roll out into a roughly 12 circle. Luckily this spelt flour pizza tastes like a proper pizza crust. Whisk 1 cup flour water honey and yeast together in a bowl.
Mix to make a rough dough then tip out onto a floured work surface and knead for 5 minutes until smooth. On a dusted surface roll the dough out to 1cm thick. If you have a pizza stone place the stone in the oven to heat.
Dissolve the honey in 125ml warm water and add to the bowl with the olive oil. Proof for 10 minutes. Step 2 stir remaining flour olive oil and salt into yeast mixture.
After 10 minutes pour the yeast mixture into the flour and stir together with a wooden spoon. Preheat the oven to 180 degrees. Beat the buttermilk oil egg and 100ml water together then mix the wet ingredients into the dry.
Spelt doughs are very very sticky it is worth keeping a bowl scraper or spatula to hand so that you can scrape the dough off of your mixing hand. If your dough is dry and there is not all coming together then add 1 tbsp of warm water and continue mixing kneading. Combine lukewarm water yeast and honey in a large bowl.
If you only have whole spelt flour on hand i would recommend using a 50 50 mix of whole spelt and regular all purpose flours in order to achieve the right texture. Combine the flour baking powder sea salt and sugar in a bowl. Let it sit for approximately 10 minutes.
